Harissa Halloumi Salad

This substantial salad embraces smoky griddled veg, salty halloumi, crunchy almonds and a flavour-packed dressing. Bright, colourful, and a real treat for your taste buds.


  • Al’Fez Moroccan spiced couscous, to serve
  • 2 tablespoons flaked almonds
  • ½ a bunch of fresh mint (15g)
  • 1 orange
  • 1 teaspoon runny honey
  • Extra virgin olive oil
  • Red wine vinegar
  • 2 teaspoons Al’Fez harissa
  • 2 mixed-colour peppers
  • 150g halloumi cheese
  • 2 mixed-colour courgettes

Swap in prawns in place of the halloumi and cook until pink.
